Sausage, apples, onions and herbs combine to make a symphony of flavor in a simple and tasty transitional season meal.

Simple Sausage Skillet
Ingredients
2 packs of plain or apple-flavored chicken sausage (about 24 oz total)
4 large apples (Honeycrisp are ideal)
2 large sweet onions
1 tablespoon butter
1 bunch of sage
1 bunch of thyme
1 pinch of allspice
1 pinch of nutmeg
salt and freshly ground pepper to taste

Directions
Pan: 1 large skillet
Melt the butter in a large skillet over medium-high heat. Slice the onions into large crescent moon shapes and toss into the skillet. Bind the sage and thyme into one bundle and toss in the pan. Add the allspice, nutmeg, and salt and pepper to taste to the skillet. Saute until the onions just start to turn translucent.
Slice the apple into wedges, and add the apple wedges to the onion pan. Keep cooking until both the apples and onions are lightly browned.
Pluck out the old herbs bundle and put the apples and onions into a serving dish. Slice the sausage into bite-size chunks and quickly sautee them in the hot skillet, until they're lightly browned and warmed.
Serve the Simple Sausage Skillet hot, with the sausage on top of the onions and apples.
